Let's Cook "Curry Rice!" Japanese Comfort Food

Curry with rice, or "curry rice," has come to be considered a comfort food for many Japanese. It is said that the dish was developed from a stew using Indian curry powder, introduced to Japan by western influence. These days, it is a staple in homes all over the country, and curry restaurants can also be seen in many places. This just goes to show how much Japanese men and women of all ages have come to love "curry rice."

In this workshop, the instructor, Terumi, will share her family recipe. Combining 10 spices, and using fruits and vegetables to thicken, the curry is packed full of nutrients. While the curry simmers, she will also show how to make Japanese sweets. As a side dish, Tandori chicken, or for those who don't eat meat, grilled vegetables will be prepared. After the meal, you can enjoy matcha tea and wagashi (Japanese sweets).

Let's Cook Tofu Dishes! Basic Japanese Food

In this workshop, you will learn how to make Japanese dishes that use soy-based products like soy milk or tofu, as well as how to make dashi. Dashi is a basic soup stock that is a key element in authentic Japanese cuisine. Whether or not you can bring out the umami flavor in many dishes rests on the dashi.

You and Terumi will prepare creamy tofu, along with the accompanying condiments, as well as various other dishes that use tofu. These include yuba (soy milk skin), stewed vegetables, and steamed tofu with vegetables (made with Koya Tofu). Then, you will try the food you've made together. After the meal, you can enjoy wagashi (Japanese sweets) and houjicha (roasted green tea).
